Quique Dacosta Celebrates the 15th Anniversary of Vuelve Carolina

This year, we are celebrating something very special: fifteen years of Vuelve Carolina. Fifteen years since we first opened our doors at Calle Correos 8, in the heart of València, with a clear idea in mind, to create a place where cuisine travels as much as the people sitting at the table.

A lot has happened since then. Dishes that were born almost as a game, recipes that stayed forever, others that evolved over time, and thousands of moments shared with those who visit us. Today, we look back with a certain sense of emotion, but above all, with the desire to keep moving forward.

As Quique Dacosta says: “We are truly happy, Vuelve Carolina continues to be a place to be in the city for both local and international guests, and it still surprises those who visit us.”

Welcoming Back the Classics

To celebrate this 15 anniversary of Vuelve Carolina, we (Dacosta and the team, led by Beatriz Manzanares, Gonzalo Silla, Giuseppe Bono, and Karina Hurtado) decided to do something we were really looking forward to: bringing back some of the dishes that have defined the restaurant’s history, revisiting flavors that are already part of our guests’ memory.

Throughout the year, some of these recipes will return. Among them: foie yogurt, flame-grilled pork jowl bao, txangurro ravioli, our patatas bravas (awarded Best Creative Bravas at Madrid Fusión 2024), tiger mussel, boletus and parmigiano coca, and baby cuttlefish with seaweed pesto.

Dishes that represent different moments in Vuelve Carolina’s journey – ones we want to cook again to keep creating memorable experiences.

A Culinary Journey That Keeps Evolving

From day one, we imagined Vuelve Carolina as a gastronomic journey through global trends. A place where cuisine is in constant motion, where ideas blend, and where each dish can be a different stop along the way.

Today, that journey is still alive on the menu. We can move from Korea with our rice in llanda with chicken and kimchi, to Singapore with our soft chili crab sandwich, or stop in Mexico with our rib tacos. There are as many destinations as there are ways to explore them. Always accompanied by a creative perspective, a cocktail menu, and a way of enjoying the table that has always felt like a celebration.

In 2024, one of our most iconic dishes – patatas bravas – received the award for Best Creative Bravas in Spain at Madrid Fusión. A recognition that meant a great deal to us and one we share with the entire team.

Not Just Food

If there is one thing that has always defined Vuelve Carolina, it is that much more happens here than just cooking. From the very beginning, we spoke about “Not Just Food” because we wanted to create a space where dishes, music, cocktails, and atmosphere coexist.

A place to stay a little longer. To share. To return.

This way, Vuelve Carolina offers an experience built around this concept – a clear expression of what the restaurant is and what it offers. It perfectly captures the intention: to create a multisensory experience where music, food, cocktails, service, and connection come together in an urban oasis.

This recipe for happiness includes many ingredients – some of them still secret.

We Keep Traveling Through Flavors

Fifteen years later, we remain just as curious as we were on day one. Between memories and new ideas, our goal throughout the year is to keep traveling through flavors – discovering ingredients, revisiting dishes, and finding new stories to tell through our cuisine.

This anniversary of Vuelve Carolina is, above all, an opportunity to celebrate with everyone who has been part of this journey: guests, our team, friends, and curious visitors who have sat at our tables.
